Apple Cider Pancakes

These pancakes were probably the best decision I've made all week; which is saying a lot, because it's been a pretty fantastic last couple of days. As fall slowly approaches, it's casting its spell on me to want to start cooking and baking fall inspired recipes left and right. My husband is quite okay with this. 


Ingredients:

2 cups flour
1 tbsp sugar
3 1/2 tsp baking powder

1/2 tsp vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon salt

1 egg
1/4 cup butter, melted
1 cup apple cider

1 tbsp ground cinnamon
1 tsp ground nutmeg 
1 tbsp brown sugar


Combine the flour, sugar, baking powder, baking soda, and salt. Mix well. Next, stir in the egg, melted butter, and apple cider. You can adjust the apple cider to preferred thickness. Then, mix in the cinnamon, nutmeg, and brown sugar.

Turn the heat on the stove top to medium low. Melt a tsp of butter in the frying pan. Once butter begins to sizzle, pour 1/4 cup pancake mix onto the skillet for each pancake. Turn over once bubbles begin to show in the center, and cook until golden brown on the other side. Serve immediately with warm maple syrup. The recipe makes 10-12 pancakes. Serve with some hot coffee or apple cider!

  8. YUMMY! I love pancakes and I try to make some every other Sunday. To reduce the amount of maple syrup we eat, I put two tablespoons in a small bowl with 1/2 cup of frozen berries in the microwave for a minute. Then I smash. The result is a great combo of syrup and berries, but the juice from the berries makes enough syrup for two!
